CRUNCHY CORN SALAD

Crunchy Corn Salad
Ingredients
- 1½ cup American Sweet corn, boiled
- ¾ cup Tomato
- ¾ cup Green Capsicum, cubed
- ½ cup Spring Onion (include green stem), chopped
- 1 tbsp Pumpkin seeds
- 2 tbsp Black Raisins, washed & soaked for a while
- 1 stalk Celery, chopped fine
- ½ tsp Pounded pepper
- 2 tbsp Thai sweet chilli sauce
- ½ tbsp Lemon juice /vinegar
- Salt-to-taste
- 2 tbsp Feta Cheese/Processed cheese, grated
Instructions
- In a large mixing bowl, add all the vegetables and chill till serving time
- Just before serving, mix in the spices, salt and dressing and toss well
- Serve garnish with cheese
Notes
- Sweet corn contains a lot of fiber and protein while being low in fat and sodium.
- Flax seeds and pumpkin seeds are high in fiber, omega-3 fatty acids
- The vegetables, add that wholesome goodness of fiber, vitamins, minerals and antioxidants for a healthy boost.
