Laal Kaddu Ka Shorba (Red Pumpkin Soup)

Ingredients
  

  • cups Red pumpkin peeled, cubed
  • ¼ cup Onion sliced
  • ½ tbsp Soya flour or oats flour
  • ½-¾ cup Milk
  • 4-5 Garlic cloves
  • ½-¾ tsp Cumin seeds
  • 8 Pepper corns crushed
  • ¼-½ tsp Chili powder or to taste
  • ¼ tsp Turmeric powder
  • 1 small Cinnamon stick
  • 2-3 Ghee/Oil or butter
  • Salt to taste

Instructions
 

  • In a pressure cooker add the oil/ghee, add sliced onions, cinnamon stick, cumin seeds, crushed pepper corns and garlic
  • Sauté for 2-3 minutes, add the peeled and cubed red pumpkin, sauté for a minute
  • Add the turmeric and chili powder, add salt and sauté again
  • Add the flour, sauté for a minute
  • Add about a cup of water
  • Close the lid and cook for one whistle and 5 minutes on low flame
  • When the cooker cools, open, cool the contents, remove the cinnamon stick
  • Blend in a mixer till smooth
  • Add some more water, simmer on a low flame
  • Add the milk, simmer for a while
  • Serve hot garnished with chopped coriander leaves or a little grated cheese if you desire
