Chimichuri Sauce

Ingredients
  

  • 1 cup Coriander leaves , wash, coarsely chop
  • 1 cup Parsley , wash coarsely chop
  • 1 tbsp Oregano (dried)
  • 2 tbsp Onion - chopped
  • 8-10 nos. Garlic cloves
  • 2-3 tbsp Red vinegar
  • 2-3 tbsp Lemon juice
  • 1 tbsp Chili flakes
  • 2 nos. Green chilies
  • ½ White pepper
  • ½-¾ cup Olive oil
  • 1 tbsp Almond, powdered
  • Salt-to-taste

Instructions
 

  • Alternately, chop all the herbs and garlic-onion very finely and mix well adding the vinegar, lemon juice and olive oil
  • Adjust the spice and tart/sour as per your taste
  • Sauce can be stored in a glass container in the refrigerator for about a week
  • Chimichuri can be used as an accompaniment or to braise
  • 1/3rd of the total quantity of the sauce can be used in the above receipes
