Millet & Eggs

Ingredients
  

Ingredient A

  • 2 tbsp Jowar flour
  • 2 tbsp Amaranth flour-(Rajgira)
  • 2 tb sp Oats flour
  • 2 tbsp Chickpea flour- (Besan)
  • 1 tbsp Soya flour
  • 1 tsp Grated ginger
  • ¾ tsp Chili powder
  • ¼ tsp Ajwain, crushed
  • Salt-to taste

Ingredient B

  • 2 Eggs
  • 1 tbsp Capsicum, chopped
  • 1 tbsp Onion- chopped
  • 2 Green chili, finely chopped
  • 2 tbsp Coriander leaves-chopped
  • ¼ tsp Pounded pepper
  • Salt to taste
  • Oil-for drizzling

Instructions
 

  • In a mixing bowl, add all Ingredients “A” and blend well using a whisk to a batter consistency adding sufficient water, keep aside
  • In another bowl, beat the eggs and add all Ingredients “B” except the oil

TO ASSEMBLE

  • Heat a medium-sized non-stick pan, pour a Ladle full of the millet mix batter and spread evenly, drizzle some oil on the sides
  • Cook for a while, turn over, and cook till almost done
  • Spread some of the egg-veggies mixture on top of the millet pan-cake, cook covered for a minute, sprinkle some grated cheese on top, then fold over the four sides to form a packet-like shape
  • Cook for a while, serve hot with sauce/ketchup and a glass of milk shake
