Millet & Paneer

Ingredients
  

Ingredient A

  • 2 tbsp Jowar flour
  • 2 tbsp Amaranth flour-(Rajgira)
  • 2 tbsp Oats flour
  • 2 tbsp Chick pea flour- (Besan)
  • 1 tbsp Soya flour
  • 1 tsp Grated ginger
  • ¾ tsp Chili powder
  • ¼ tsp Ajwain, crushed
  • Oil for drizzling
  • Salt- to taste

Ingredient B

  • 1 small Boiled potato
  • 2 tbsp Paneer, crumbled
  • ½ cup Green peas, boiled
  • 1 tbsp Capsicum, chopped
  • 2 tbsp Onion- chopped
  • 3 tsp Hot & sweet sauce
  • 2 Green chili, finely chopped
  • 2 tbsp Coriander leaves, chopped
  • ¼ tsp Pounded pepper
  • 1 tbsp Cheese, grated
  • 2-3 tsp Oil
  • Salt-to-taste

Instructions
 

  • In a mixing bowl, add all ingredients “A” and blend well using a whisk to a batter consistency adding sufficient water, keep aside
  • Heat oil in a non–stick pan, saute the onions for a while
  • Add slightly mashed potatoes and green peas, add chopped capsicum, coriander leaves and chopped green chilies,
  • Mix in the sauce, salt and pepper, crumbled paneer and adjust seasonings and keep aside
  • TO ASSEMBLE
  • Heat a medium-sized non-stick pan, pour a ladle full of the millet mix batter and spread evenly, drizzle some oil on the sides
  • Cook for a while, turn over and cook till almost done
  • Spread some of the paneer-veggies mixtures on top of the millet pancake, cook covered for a minute, sprinkle some grated cheese on top, then fold over the four sides to form a packet like a shape
  • Cook for a while, serve hot with sauce/ketchup and a glass of milk-shake
