Sprout Green Momos

Ingredients
  

  • ½ cup Rice flour
  • ½ cup Ragi flour
  • ¾ cup Sprouted Moong or Green peas. parboiled
  • 2-3 tbsp Spinach leaves, clean,wash and chop
  • 3 tbsp Coriander leaves
  • 1-2 Green chilies, finelychopped
  • 1 inch piece Ginger
  • 3-4 Garlic,cloves,grated
  • 2 tbsp Sesame seeds
  • 2-3 tsp Chili sauce
  • Pounded pepper- few pinches
  • Salt-to taste
  • 2 tsp Oil
  • Lemon-few drops

Instructions
 

  • Heat 1 ¼ cup water in a pan, add ½ tsp salt, 2 tsp oil to it.
  • Whenwater starts boiling, shoot in the rice flour and Ragi flour mixture, stir quickly. Put a lid and keep aside to cool.
  • Heat oil in a Kadhai, add the, ginger, garlic, green chili and sesame seeds.
  • Add the chopped palak leaves and saute for 2 mins
  • Add the parboiled sprouted moong or green peas, schezwan sauce and mix well.
  • Add the coriander leaves, sugar and salt.
  • Mix well, squeeze in a little lemon.
  • Adjust seasoning and use as filling.
  • Knead the cooled rice-ragi dough with wet hands, knead well and make into small balls and roll into small puris.
  • Add the filling into the small puris and shape it like a momo.
  • Steam the momos for 15 minutes and serve with chutney/sauce of your choice.
