Heat 1 ¼ cup water in a pan, add ½ tsp salt, 2 tsp oil to it.
When water starts boiling, shoot in the rice flour and Ragi flour mixture, stir quickly. Put a lid and keep aside to cool.
Heat oil in a Kadhai, add the, ginger, garlic, green chili and sesame seeds.
Add the chicken mince and saute for 2 mins, cover and cook on a low flame for 4-5 minutes
Add the chopped spinach and saute for a while, mix in the schezwan sauce.
Add the coriander leaves, sugar and salt.
Mix well, squeeze in a little lemon.
Adjust seasoning and use as filling.
Knead the cooled rice-ragi dough with wet hands, knead well and make into small balls and roll into small puris.
Add the filling into the small puris and shape it like a momo.
Steam the momos for 15 minutes and serve with chutney/sauce of your choice.
