Boiled Kabuli Chana

Mini soya chunks

Baby potatoes, boiled

Tomatoes, cubed after de-seeding

Capsicum, cubed

Coriander leaves

Flaxseeds- slightly roasted
DRESSING

Grated ginger

Finely chopped garlic

Finely chopped onion

Thai sweet chili sauce

Instructions
Soak the mini soy chunks in hot water to which a little salt is added for about 7-8 minutes, drain and squeeze out all excess water
In a mixing bowl place all the vegetables and the squeezes soya chunks, chill for a while
Mix all the “Dressing” ingredients into a tight lid bottle, shake well
Pour the dressing over the mixture of Kabuli chana, soya chunks and vegetables. Taste and adjust seasonings
Serve chilled with a sprinkling of flax seeds and lavash/crushed khakhra/toasted croutons/breadsticks
