Kabuli- Soya And Potato Medly

Ingredients
  

  • 1 cup Boiled Kabuli Chana
  • ½ cup Mini soya chunks
  • 4-5 Baby potatoes, boiled
  • 2 Tomatoes, cubed after de-seeding
  • 2 tbsp Capsicum, cubed
  • 1 tbsp Coriander leaves
  • 2 tbsp Flaxseeds- slightly roasted

DRESSING

  • ¾ tbsp Grated ginger
  • 1 tsp Finely
  • ½ tsp Finely chopped garlic
  • 2 tsp Finely chopped onion
  • 1 tbsp Thai sweet chili sauce
  • ¼ tsp Salt
  • 2 tsp Honey
  • ½ tsp Pounded pepper
  • 2-3 tsp Lemon juice

Instructions
 

  • Soak the mini soy chunks in hot water to which a little salt is added for about 7-8 minutes, drain and squeeze out all excess water
  • In a mixing bowl place all the vegetables and the squeezes soya chunks, chill for a while
  • Mix all the “Dressing” ingredients into a tight lid bottle, shake well
  • Pour the dressing over the mixture of Kabuli chana, soya chunks and vegetables. Taste and adjust seasonings
  • Serve chilled with a sprinkling of flax seeds and lavash/crushed khakhra/toasted croutons/breadsticks
