Kabuli Hot Pot With Sweet Potato

Ingredients
  

  • cups Boiled kabuli chana (chick peas)
  • 1 medium Red Bell peppers - cut into medium size cubes
  • 1 medium Green Bell pepper - cut into cubes
  • 1 large Onion - Chopped
  • 2 large Tomato - grated or pureed
  • 8-10 cloves Garlic - chopped
  • 2 tbsp Coriander leaves - chopped
  • 1 tbsp Mint leaves - chopped
  • 1 inch piece Ginger - thickly grated or cut intojuliennes
  • 1 Bay leaf
  • 1 Star anise
  • ½ tsp Ajwain
  • ½ tsp Jeera
  • ¾-1 tsp Chili powder
  • ¼ tsp Black salt
  • Lemon juice- to taste
  • Salt- to taste
  • 1 tbsp Oil
  • 1 tbsp Butter

For The Sweet Potato

  • 2 large = 250gms of Sweet potato
  • 1 tsp Seasame seeds
  • Black salt- to taste
  • Crushed peppercorns- to taste
  • 2 tsp Oil
  • 2 tsp Butter
  • Lemon-to taste

Instructions
 

  • Pressure cook the soaked Kabuli chana adding a little salt, till done
  • In a deep pan add the cooking oil, add bay leaf and star-anise
  • Add to this the ajwain, jeera, and the chopped onions
  • Saute for a while, add chopped garlic, saute again for a few minutes
  • Add the red chili powder and tomato puree
  • Fry for a few minutes, add the choppedbell-peppers and the butter
  • Saute till the tomato gravy is cooked
  • Add the boiled chick peas, simmer for some time
  • Add black salt
  • Add lime, adjust seasonings
  • Dish out into a deep plate, garnish with chopped coriander and mint leaves, and ginger juliennes
  • Serve with sauted sweet potato and steamed broccoli and rings of one  boiled egg or two large chunks of grilled paneer

For The Sweet Potato

  • Parboil the sweet potato in salted water tilljust done, do not overcook
  • Peel and cut into roundels or wedges
  • Add 2 teaspoons of oil and 2 teaspoons of butterto a non-stick pan
  • Add the sesame seeds, and saute the sweet potatoon a moderately high flame
  • Sprinkle some black salt and crushed peppercorns
  • Stir fry for a minute or so, add a dash of limeand serve with the Kabuli hot pot
  • Serve with a glass of butter-milk
