LAAL KADDU KA SHORBA (RED PUMPKIN SOUP, DESI STYLE)

Laal Kaddu Ka Shorba (Red Pumpkin Soup)
Ingredients
- 1½ cups Red pumpkin peeled, cubed
- ¼ cup Onion sliced
- ½ tbsp Soya flour or oats flour
- ½-¾ cup Milk
- 4-5 Garlic cloves
- ½-¾ tsp Cumin seeds
- 8 Pepper corns crushed
- ¼-½ tsp Chili powder or to taste
- ¼ tsp Turmeric powder
- 1 small Cinnamon stick
- 2-3 Ghee/Oil or butter
- Salt to taste
Instructions
- In a pressure cooker add the oil/ghee, add sliced onions, cinnamon stick, cumin seeds, crushed pepper corns and garlic
- Sauté for 2-3 minutes, add the peeled and cubed red pumpkin, sauté for a minute
- Add the turmeric and chili powder, add salt and sauté again
- Add the flour, sauté for a minute
- Add about a cup of water
- Close the lid and cook for one whistle and 5 minutes on low flame
- When the cooker cools, open, cool the contents, remove the cinnamon stick
- Blend in a mixer till smooth
- Add some more water, simmer on a low flame
- Add the milk, simmer for a while
- Serve hot garnished with chopped coriander leaves or a little grated cheese if you desire
Notes
- Milk adds an excellent quality protein to the recipe while pumpkin is low in calories and high in vitamins, minerals, and antioxidants.
