Easy Mock Waldrof Salad
Ingredients
- 3 cups Curd
- 1½ cup Apples, cubed
- 10 nos. Black Grapes
- 1 cup Cucumber, cubed
- ¼ cup Capsicum, chopped
- 2 Lettuce leaves, shredded
- 4 tbsp Walnuts, cut into medium bits
- 2 tbsp Raisin
- 1 stalk Celery, chopped
- 1 tsp Pounded pepper
- ½ tsp Mustard powder or paste
- 2 tbsp Honey
- Salt- to taste
Instructions
- Place the curd in a thin mesh strainer and drain off the water
- In a bowl place all the cut vegetables and apples, chill for some time
- Transfer the hung curd to a mixing bowl, combine it with pounded pepper, mustard, salt, and honey
- Gently mix in the chilled vegetables, chopped celery and fruit into the curds mixture
- Add the walnuts and raisins, adjust seasonings
- Chill for some time
- Serve in a lettuce leaf lined bowl
- * Boiled cubed chicken can be added to the salad if desired
Notes
- The fiber and micronutrients in nuts and raisins provide satiety and nourishment
- Curd adds good quality protein to the recipe
- The fruits and vegetables, add that wholesome goodness of fiber, vitamins, minerals and antioxidants for a healthy boost.
