Kabuli- Soya And Potato Medly
Ingredients
- 1 cup Boiled Kabuli Chana
- ½ cup Mini soya chunks
- 4-5 Baby potatoes, boiled
- 2 Tomatoes, cubed after de-seeding
- 2 tbsp Capsicum, cubed
- 1 tbsp Coriander leaves
- 2 tbsp Flaxseeds- slightly roasted
DRESSING
- ¾ tbsp Grated ginger
- 1 tsp Finely
- ½ tsp Finely chopped garlic
- 2 tsp Finely chopped onion
- 1 tbsp Thai sweet chili sauce
- ¼ tsp Salt
- 2 tsp Honey
- ½ tsp Pounded pepper
- 2-3 tsp Lemon juice
Instructions
- Soak the mini soy chunks in hot water to which a little salt is added for about 7-8 minutes, drain and squeeze out all excess water
- In a mixing bowl place all the vegetables and the squeezes soya chunks, chill for a while
- Mix all the “Dressing” ingredients into a tight lid bottle, shake well
- Pour the dressing over the mixture of Kabuli chana, soya chunks and vegetables. Taste and adjust seasonings
- Serve chilled with a sprinkling of flax seeds and lavash/crushed khakhra/toasted croutons/breadsticks
